Ingredients
- 2 large roasted butternut squashes
- 2 cups milk of choice almond milk, cows milk, etc
- ¾ stick of butter
- 1 bay leaf
- 1 tsp dried thyme
- 2 tbsp of oil
- 2½ cups of chicken stock
- Plain Greek yogurt to garnish optional
- Salt and pepper to taste
Instructions
- (Parent or older children) preheat oven to 400°F.
- Have child(ren) collect all the ingredients and wash the vegetables.
- (Parent or older children) peel and cut squash into cubes.
- Have child(ren) lightly coat the squash with oil, bay leaf, and thyme, salt and pepper.
- (Parent or older children) roast the squash for an 45min or until tender
- (Parent or older children) add squash into a blender, immersion blender or food processor and slowly add milk, and the chicken stock.
- Blend well and then place into a pot on medium heat.
- Have child(ren) supervised by an adult add butter, oil, salt and pepper and stir and cook on low for 10 minutes.
- Have child(ren) garnish with plain Greek yogurt.
Notes
This recipe can be made ahead of time and frozen so its ready to go for those busy winter nights.
