Blueberry Rice Crispy Squares

Our Marketing Manager did a makeover to her son's favorite 'rice crispy squares' to add a bit of nutrition while keeping all the delightful gooeyness. Thumbs up! Here is her 'switch up' using coconut oil instead of butter, flax seeds, and blueberries for protein, omegas and fibre.

  • 1/4 cup coconut oil
  • 40 regular size marshmallows or 5 cups of mini marshmallows
  • 2 tbsp milled flaxseeds
  • 6 cups rice cereal
  • 1/2 cup frozen blueberries


  • In a pot or microwavable bowl melt the marshmallows and coconut oil together.
  • Once completely melted stir in the vanilla and pour in the blueberries. Mash the mixture with a whisk until your blueberries are well crushed and incorporated. Stir in the rice cereal and flax.
  • Press into a greased pan to chill for at least 30 minutes.


Pro Tip - If you're making these for an outdoor summer event, chill and cut into squares. Stack into a freezer safe container separating your layers with parchment paper and freeze so that they're not too melty by the time you're at your destination.
