Chia pudding is quick and easy to make but also versatile to have any time of day. Chia seeds are higher in Omega 3s than even salmon and loaded with fibre. Top your pudding with any flavours you can imagine (some favs are strawberries, blueberries, bananas, nuts, PB&J, cinnamon, chocolate, coconut).
- 2 cups coconut milk
- ½ cup chia seeds
- ½ tsp vanilla extract
- ¼ cup maple syrup or sweetener and amount of choice
- ¼ tsp cinnamon optional
- Blend all ingredients except chia seeds in a blender until smooth, including any added flavors, fruits, or chocolate. Whisk in chia seeds.
- Pour mixture into a jar or glass bowl and place in the refrigerator for at least 4 hours to let set.
- Stir a few times within the first hour to help it gel evenly. Easy to make the night before to have for breakfast or top with fruit, maple syrup and/or dollop of whipped cream to have as a light dessert after dinner.
For a fun summer treat, freeze the pudding in popsicle molds. Adapted from Wellness Mama
