Freezer Apple Pie Filling

It's harvest time here in Calgary, Alberta and that means stocking the freezer with our homegrown or market fresh produce. This freezer version of apple pie filling is wonderful to use over the winter for pies, tarts, crostadas, french toast and my favorite, apple crisp.

Ingredients

  • 7 lbs apples approx. 22-24 cups peeled peeled, sliced apples
  • 1 lemon
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 cup corn starch
  • 1 tablespoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • 1/2 teaspoon salt
  • 6 cups water

Instructions

  • Peel, core and slice apples. Toss apple slices with lemon juice & zest as you are preparing the apples to prevent browning. Set aside when done to prepare the rest of the filling.
  • In a large pot, add the white and brown sugars, corn starch, cinnamon, nutmeg, allspice, salt and water. Bring to a boil while stirring over medium-high heat. Bring to boil for 2 minutes until thick and bubbly.
  • Stir in apple slices and cover. Reduce heat to simmer for 10 minutes or until apples begin to soften. Remove from heat and cover.
  • Let cool about 30-40 minutes, checking occasionally. The apples should be soft but not mushy.
  • Ladle into freezer bags. About 2 1/2 cups would be enough for one pie if that is your ultimate goal.
  • Let cool on the counter, label and date the bag and then freeze for up to one year.
