Fall is a Fantastic Time for Apple Lovers!

Apples are a super nutritious choice, hence the old saying, “An apple a day…” and you know the rest!

Here’s just a few of their health benefits:

  • High in polyphenols, which function as antioxidants
  • Loaded with vitamin C
  • High in insoluble fibre, which promotes healthy digestion
  • Contains heart-healthy soluble fibre too
If you find yourself with a whole lot of apples, here’s how to care for them so they’ll last as long as possible:
  • Choose a variety that keeps well which will usually be those with a thicker skin such as McIntosh, Rome, Granny Smith, Honey Crisp.
  • Handle them with as much care as possible as apples bruise very easily and a just one rotting apple can have an affect on all of the apples around it. 
  • If you have alot of apples, you’ll want them to be in a dark, cold place, like a cellar or a garage. You’ll want the temperature to be near freezing, but not below zero! Wrapping your apples individually in newspaper will help. 
  • If you’re keeping them in the fridge, place them in the crisper drawer in a vented bag. Remember that the gas that apples gives off will cause the other produce nearby to ripen faster.

Pumpkin Oatmeal Cookies with Maple Glaze

These cookies are one part cookie, one part scone. You can eat them plain, dip them in the maple glaze, or even slice them in half and add some cream cheese. The flax egg makes them a great vegan option too. In this recipe, feel free to substitute a regular egg in for the flax egg and your results will work out the same. If you have pumpkin pie spice handy, you could also use that as your seasoning to your taste preference.
