Garden Green Berry Salad

This salad is a great way to incorporate all the delicious leafy greens you have growing in your garden or stored in your fridge! It is chalked full of vitamins A, C, D, and K. Instructions geared for ages 8 & up

Ingredients
  1. 4 cups in total of garden greens (Kale, Spinach, Beet Greens, Swiss Chard, Romaine, Leaf Lettuce, or any other leafy green)
  2. 1 cup of vegetables (carrots, radishes, cucumber, red onion, celery etc.)
  3. ½ cup of berries or fruit of choice – optional (strawberries, mandarin orange segments, apple, raspberries, avocado, etc.)
Dressing
  1. ¼ cup oil (olive oil, canola oil,
  2. 3 tbsp vinegar (balsamic, red wine vinegar, or white wine vinegar
  3. Salt and pepper to taste
Instructions
  1. Have child(ren) wash all fruits, leafy greens and vegetables.
  2. Have child(ren) place lettuce in salad spinner or in a towel to dry off.
  3. If using kale have child(ren) de stem the kale by holding the stalk with one hand and using your pointer finger and your thumb of your other hand. Place it around the stem just above the leaves. Pull your fingers along the stem and tear off the leaves.
  4. Have child(ren) tear all leaves or cut with a knife into bite sized pieces and place in salad bowl.
  5. Have child(ren) sprinkle desired vegetables and berries over torn lettuce leaves.
  6. Have child(ren) in a bowl or jar mix dressing (oil and vinegar).
  7. Have child(ren) lightly toss salad with dressing and enjoy!
Notes
  1. Tips: Different flavours to try!
  2. Dried fruit, goat cheese, diced apple, and nuts
  3. Tomatoes, cucumber, red onion, diced peppers, and feta
  4. Mandarin orange segments, and almond slices
Dressing Suggestions
  1. Red wine vinegar, olive oil, oregano, pepper, and Dijon mustard.
  2. White wine vinegar, black pepper, honey, and olive oil.
