Parmesan Chickpea Salad

Ingredients

  • 2 Cans of Chickpeas - Drained and rinsed
  • Juice of 1/2 a lemon
  • 1/2 clove Garlic - minced
  • 3/4 cup Finely grated Parmesan cheese
  • 4 Tablespoons Olive Oil
  • A good sprinkling of chopped fresh herbs - Italian Parsley Basil, or both!
  • Salt & Pepper to your liking

Instructions

  • Drain and rinse your chickpeas under cool water. Add the chickpeas to a bowl and pour over the lemon juice and olive oil and toss.
  • Add your finely grated parmesan cheese, garlic, herbs and salt & pepper. Toss and taste. Add more salt, pepper, and herbs until it pleases your palette! If you really love lemon, add in the zest of half a lemon.
  • Chill the salad and serve. Feel free to prep a day in advance. If it dries out a little overnight, add an additional tablespoon of olive oil to the dish.
