Hearty Beef Stew

Great hearty meal packed with nutrients!
Instructions geared for ages 8 & up
Ingredients
- 500 g cubed beef
- 1/2 cup diced onion
- 1/2 cup sliced carrots
- 1/2 cup sliced celery
- 1/2 cup sliced parsnip
- 1 cup chopped cauliflower
- 2 tbs canola oil
- 2 tbs flour
- 2 tbs tomato paste
- 2 cups water or beef stock
- 1 tsp paprika
- salt and pepper to taste
Instructions
- Have the child(ren) collect and measure out the ingredients and check them off on the list to make sure all the ingredients have been collected.
- Once all ingredients are collected have the children wash all the vegetables, peel the carrots, and open the can of tomato paste.
- (Parents or older children) Add oil to pot on high heat. Add onions and beef and stir until beef pieces are browned.
- Add flour and stir until beef is coated with the flour.
- Have the children mix in water or beef stock and stir frequently until all the flour has been mixed in.
- Carefully have the children supervised by an adult add carrots, celery, parsnips, tomato paste and seasoning and mix together. Sauté over medium heat for 10 minutes.
- Carefully have the children supervised by an adult add the cauliflower, stir, cover and simmer for additional 20 minutes or until vegetables are tender.
Notes
- TIP: Stewing cut of beef is an excellent choice to use for this dish. It does however, require a longer braising time (about 1.5 hours). If you don’t have that much time, use a higher quality cut of beef, likely sirloin that will do well in a short amount of time to give it a quick sear and stew.
