Tex Mex Quesadillas
Flour tortillas filled with beans, corn, peppers, tomatoes and cheese then toasted until crisp. Quick and delicious! Instructions geared for ages 8 & up

Ingredients
  1. 1 cup cooked or canned black beans
  2. 1 cup corn kernels
  3. 3/4 cup diced tomato
  4. 3/4 cup diced red pepper
  5. 200 g of grated cheddar cheese
  6. ½ tsp chilli powder (optional)
  7. 4 - 6 6" tortilla wraps
Instructions
  1. Have children collect and measure out the ingredients and check them off on the list to make sure all the ingredients have been collected.
  2. Once all ingredients are collected have the children wash all the vegetables, and open the can of beans.
  3. (Parent or older children) Cut tomato into quarters and have child(ren) remove seeds. (Parent or older children) Chop the tomato into small pieces, mix with chilli powder and set aside.
  4. Have children use the masher to roughly mash up the beans, and set aside.
  5. (Parent or older children) Chop pepper and cilantro up into small pieces and set aside.
  6. Have children grate cheese and set aside.
  7. Get everyone involved in assembling the quesadillas, sprinkle a little cheese on half of the tortilla, sprinkle a bit of each of the vegetables on top of the cheese and then top with a little bit more cheese. Fold tortilla in half.
  8. (Parent or older children) Place assembled quesadilla onto a hot frying pan (medium heat). As the cheese starts to melt, flip the quesadilla over and toast the other side.
  9. (Parent or older children) Cut quesadilla into 3. Serve with salsa, Greek yogurt and sprinkle with cilantro.
Tips
  1. For people who like spicy foods, add some hot pepper into your quesadilla!
  2. Add left over chicken into your quesadilla! Just remember to then heat it to a minimum internal temperature of 165°F.
